You Should Know
Celiac Disease patients following a gluten-free diet need to know if the food they are considering buying contains gluten or just how much gluten it might contain. To help make these patients’ choices easier, the United States Food and Drug Administration issued a rule defining the term “gluten-free” (less than 20 parts per million gluten) and how it should be used in labeling.While using the label is voluntary, food products labeled as gluten-free have been required to comply with the defined ruling since August 5, 2014. The U.S. FDA has published “Questions and Answers: Gluten-Free Food Labeling Final Rule” to help clarify the information contained within the ruling.
